Coca Cola Brownies Recipe

Coca Cola Brownie

This is an interesting, unusual and simple recipe. Coca Cola is the only liquid used in the recipe, no eggs and butter is used.

The flavor and texture is nice. I’ve read comments left by others who tried this recipe and it gets mixed reviews. So it seems the recipe might be temperamental, depending on the type of Coca Cola used. I used Coke Zero.  It is also important to not over mix the dough otherwise it will become doughy.

Coca Cola Brownie

1¼ cups flour
1 2/3 cups sugar
2/3 cup cocoa powder
½ teaspoon salt
½ teaspoon baking powder
1 can (12 ounces) Coca Cola

1.      Heat oven to 180°C/360°F. Line with baking paper or grease a 9- by 13-inch baking sheet baking dish.
2.      Mix the flour, sugar, cocoa, salt, and baking powder.
3.      Add cola, a little at a time, and mix until incorporated. Do not over mix
4.      Bake until tooth pick comes out clean, about 30 minutes.

Peanut Oat Cookies Recipe

Peanut Oat Cookies

These cookies are light and crispy, with added crunch from peanuts. Whole or chopped peanuts are used instead of peanut butter, which gives it a distinct crunch and a stronger peanut flavor.

½ cup + 2 tablespoons flour
½ cup rolled oats
½ cup sugar (use 1 cup if you prefer ‘normal’ level of sweetness)
1 egg
¼ cup oil or butter
½ cup salted roasted peanuts (optional: chopped)
¼ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon vanilla extract

1.      Heat oven to 180°C/360°F
2.      Mix flour, rolled oats, baking powder and baking soda
3.      In a separate bowl beat butter/oil, sugar, egg and vanilla until sugar dissolves and the mixture turns pale
4.      Add flour mixture and mix well
5.      Stir in peanuts
6.      Place balls of dough about an inch thick onto a baking tray, flatten and bake until golden brown and delicious, about 12 - 15 minutes

Piadina Recipe


Before I come across this recipe I didn’t know that Italians also had flatbread. Piadina or piada is a thin Italian flatbread, typically prepared in the Romagna region (Forlì-Cesena, Ravenna and Rimini). It is usually made with white flour, lard or olive oil, salt and water (source: wikipedia).

The recipe is quite simple and basic, and easy to prepare and eat! I made extras and froze them.

1 cup flour
1 tablespoon lard (I used olive oil)
Pinch of salt

1.      Knead the flour and salt with the lard (oil) and enough water to make a smooth and pliable dough.
2.      Form a ball, wrap in plastic and chill in refrigerator for at least 30 minutes
3.      Divide the dough into two and form two round balls. Flatten and roll until about a ¼ inch thick 
4.      Cook on a hot non stick pan, turning often and flattening air pockets as they form.
